Really easy and delicious 10-minute pancake.
Only 2 ingredients needed – flour and water. Salt (to taste) is optional. I don’t use it.

For each serving (2 thin pancakes), place 2 heaped tbsp of flour in a small bowl. Preferably use whole wheat flour for a healthier and tastier pancake but plain flour will be ok too.

Add water, a little at a time, and whisk. It is best to use a whisk which is really an essential tool in any kitchen. Even for this tiny amount of flour and water mixture, a whisk will outperform a fork by a mile.

The mixture should have a runny consistency but not too watery. To check, run a tablespoon through the slurry, turn the spoon around and look at the bottom. The slurry should nicely coat the bottom and when you run your finger across it, the path drawn should remain intact and not be quickly covered again.


Heat up (medium high) a non-stick frying pan. A non-stick pan is necessary as we are not using any oil. We don’t use oil because we are not frying the pancake – we are actually baking it on the pan. If you do not have a non-stick pan, then very lightly coat the pan with oil or butter.
Ladle half the mixture into the pan and quickly but gently spread it thinly over the pan. After about 2 minutes, if you toss the pan quickly up and down, the pancake should actually lift off the pan. When the top of the pancake has firmed up, turn it over to cook the other side. I toss to flip the pancake over which takes a little practice but beats turning over with a ladle.

Keep flipping over until both sides are nicely golden brown.
Now, cook the remaining mixture.
I like to leave the pancakes to cool completely (which does not take long as they are thin pancakes) before adding things on top. I don’t like my butter to melt, hence not eating the pancakes while still warm. Butter half the pancake and spread strawberry jam (or honey) over the other half. Top the whole with a good serving of shredded cheese, roll up the pancake and enjoy.
